Straight-cut French fries are dishes often found at fast-food restaurants. However, there’s nothing better than French fries made right in the comfort of your new home at Lentor Signature. Learn how to make straight-cut French fries with our simple recipe below!

Ingredients:

  • Potatoes (Russet/Idaho potatoes work best.)
  • Salt and Pepper
  • Vinegar
  • Oil

Directions:

Preparing the Fries:

  • Cut a whole potato to 6mm/ ¼ thick slices for fluffiness and crispiness.
  • Stack 2 to 3 slices and cut further into 6mm / ¼ batons.
  • Keep sliced fries in the water to avoid browning as you keep slicing the fries.
  • Rinse and simmer fries in vinegar water.
  • Once the potato is sliced into fries, place in a colander and rinse under tap water for 15 to 20 seconds.
  • Once fries are rinsed, pour them into a pot with cold tap water, salt, and vinegar.
  • Bring to a boil on high heat and instantly turn to low heat to make the surface ripple slightly.
  • Cook for 10 minutes.
  • Use a large slotted spoon to remove fries from water and into the colander.
  • Carefully spread the fries out on trays and steam-dry for 5 minutes.

Pre-Cooking:

  • Use a large, heavy-based pot that is 10 cm / 4 in.
  • The oil depth must be 3 cm / 1.2 in.
  • Use a safety headroom of about 7 cm / 2.8 headroom right above the top of the oil for safety precautions.
  • Cook fries and separate them into 2 to 3 batches.
  • Use a slotted spoon and carefully put ⅓ of the first batch into the oil (Always wait 10 seconds before adding more batches of fries to prevent oil overflow).
  • Fry them for 50 seconds per batch while swishing the fries around once or twice.
  • When done, remove fries using a slotted spoon and spread onto a paper tray. They must be pale but not crispy.
  • Repeat with the remaining batches using the same ⅓ + ⅓ + ⅓ technique each batch, and make sure the oil is preheated to 205C (400F) before preparing another batch.
  • Cool the fries for 30 minutes on some trays.

The Final Fry:

  • When done, preheat the oil again to about 205C (400F).
  • Fry for 4 minutes, until crispy and golden-brown.
  • When done, remove with a slotted spoon and place in a bowl (Repeat with the remaining batches).
  • And finally, add a sprinkle of salt and pepper, and serve and enjoy with your friends, family, or by yourself!
